So I have a 4 YO boy and a 6 YO girl. What does that mean? My house is overrun with legos of all sorts and colors. It also means that in any given week we watch “The Lego Movie” no less than 8,637 times. (Ok maybe I exaggerate a bit but it sure seems like that.) So not only do I have the “Everything is Awesome” theme song playing in my head nonstop but I am always met with a request for Taco Tuesdays.
So here’s my goal for the summer: To have Taco Tuesday every week.
Today I’m going to start with a fairly tame and run of the mill recipe but I imagine things will get awfully creative by the end of August.
This is a ridiculously simple recipe but it does involve a crock pot so figure that into your cook time. I like to make extra and then eat off the leftovers for the rest of the week. I put the chicken in salads, on nachos, in quesadillas, pretty much anything!
This is what the chicken should look like after it’s shredded and mixed. (Mine is in a pan because I am reheating it.)
As mentioned in step number 5 I like to add cheese to the tortillas while they’re cooking.
Then fold them into “taco” shape before filling them.
Add the chicken and whatever garnish you want! We are pretty plain around here and only use sour cream and some extra salsa but feel free to add tomatoes or lettuce or anything else!!

I make this exact recipe. LOVE IT. I add black beans to the crock pot also just for some added protein. So good on salads. It also is usually worked into our dinner rotation at least twice a month.
Yep! I add black beans and corn and eat it on salads for a week at a time!!
